CARAMEL CORN 
8 c. popped popcorn
3/4 c. packed brown sugar
6 tbsp. butter
3 tbsp. light corn syrup
1/4 tsp. salt
1/4 tsp. baking soda
1/4 tsp. vanilla

Put popcorn in baking pan, remove any unpopped kernels. In 1 1/2 quart saucepan mix brown sugar, butter, corn syrup and salt. Medium heat, mix until mixture starts to boil. When mixture boils, stop stirring. Cook for 5 minutes. Turn off burner, stir in baking soda and vanilla. Pour over popcorn. Using rubber spatula, scrape sides of pan and gently stir popcorn and mixture, coating all popcorn.

Put in pan and bake at 300 degrees for 15 minutes. Remove from oven, stir with wooden spoon. Put back in oven and bake 5-10 minutes longer. Makes 8 (1 cup) servings.
