VIDALIA ONION PIE 
4 med. Vidalia onions, sliced thin
1 stick butter
3 eggs, beaten
1 c. sour cream
Pinch salt and pepper
Dash of Tabasco sauce
1 unbaked pie shell
Grated Parmesan cheese

Saute onions in butter. Scrape into a bowl. Combine eggs and sour cream and add to the onions and butter. Season with salt, pepper, Tabasco, and pour into pie shell. Sprinkle with Parmesan cheese. Bake at 450 degrees for 20 minutes. Reduce heat to 325 degrees and bake 20 minutes longer.
