MEXICAN CORNBREAD 
1 c. yellow cornmeal
2 eggs
1 c. milk
1/2 tsp. baking soda
3/4 tsp. salt
1 (18 oz.) can cream corn
1/2 c. bacon dripping
1 lg. white onion, chopped
1/2 lb. grated Cheddar cheese
4 jalapeno peppers, diced
1/2 lb. ground beef or pork

Mix all ingredients. Place in 2 quart casserole dishes that has been sprayed with Pam. Bake 40 minutes at 375 degrees. Cut in squares. Serve with Picante Sauce.
