BEEF AND RICE SKILLET FIESTA 
1 lb. ground beef
1 tbsp. salad oil
1 diced onion
2 tsp. salt (or less)
1/4 tsp. pepper
1 can tomatoes (16 oz.)
1 can corn (12 oz.)
1 1/2 c. bouillon
1/2 c. of thin strips of green pepper
1 1/2 c. Minute Rice

Brown meat quickly in oil in skillet, leaving meat in coarse chunks. Add onion. Cook over medium heat until onion is tender. Add seasonings, corn, tomatoes, and bouillon; bring to a boil. Stir in green pepper; boil again. Stir in rice; cover and simmer 5 minutes. Fluff with fork. Serves 4.
