SLICED BAKED POTATOES 
4 med. even potatoes
1 tsp. salt
2-3 tbsp. melted butter
2-3 tbsp. chopped fresh herbs (parsley, chives, thyme, sage or 2-3 tsp. dried herbs)
4 tbsp. grated cheddar cheese
1 1/2 tbsp. Parmesan cheese

NOTE: Prepare as for oven to do in microwave. Microwave on high 10 minutes, re-arrange after 5 minutes. Let rest 5 minutes, sprinkle with cheese. Microwave another 4 to 6 minutes.

1. Peel potatoes if skins are tough, otherwise just scrub and rinse.

2. Cut potatoes into thin slices but not all the way through. Use the handle of a spoon to prevent knife from cutting all the way.

3. Put potatoes in baking dish. Fan them slightly.

4. Sprinkle with salt and drizzle with butter. Sprinkle with herbs.

5. Bake at 425 degrees for 50 minutes.

6. Remove from oven, sprinkle with cheese.

7. Bake another 10 to 15 minutes to lightly brown and cheese melt.

Since microwave ovens vary in power, you may need to adjust your cooking time.
