CEILIDH BAKE 
1 lb. potatoes, peeled, sliced & parboiled
4 oz. streaky bacon, cut into strips
1 onion, sliced
4 oz. cheddar cheese, grated
3 eggs
1/4 pt. milk
1 tsp. mixed herbs
Salt & pepper

Arrange the potato slices in a small casserole dish. Fry bacon until crisp. Remove and place on potatoes. Reduce the heat and fry the onions in the bacon fat until transparent. Place on top of bacon and potatoes. Scatter the cheese over the contents of casserole. Beat eggs, milk and seasonings together and pour over the casserole. Bake at 375 degrees for 40 minutes or until set. Yield: 4 servings.
