SHRIMP SALAD 
This is based on boiling around 2 pounds of shrimp. If more, add accordingly.

4 qt. water
3 cut up onions
4 pieces of celery
2 to 3 garlic pods
Bay leaves are optional
Tablespoon of liquid crab boil
Salt (brine water) so salty that it turns your face ugly

Place all in the water (it doesn't matter really how much water as long as it covers the shrimp when you place it in the pot). Bring to boil (without the shrimp in it) and let boil for about 5 minutes or more. Then as it is boiling, place shrimp (with shells and had been washed in cold water before).

Let the shrimp boil for about 3 or 4 minutes (high) and then cover and shut off fire. Let the shrimp sit in pot to absorb all that good seasoning, half hour, hour, whatever; pour in colander, let it cool until you can peel shells off.

Now on the back of shrimp, there is a little black intestine full of "sterilized" dirt (so it won't kill you). Take this black stuff out by a knife and make a slice top of the back and scrape it out with the knife or if you are in a hurry to eat the shrimp, just leave it in. Nobody will know the difference (they've got to eat a bushel of dirt before they die anyway). They will think it is black pepper (ha, ha).

Now, to make your shrimp salad, after you've peeled the shrimp, cut up whatever size you want and add: green onions or plain old onions (whatever you want), celery, green pepper.

I think I added a bunch of green onions, half green pepper and probably 4 to 5 celery sticks, cut up fairly fine, depending on how you like it. Be creative, if you have made chicken salad, this would be the same recipe. Add mayonnaise.

Also, the above recipe is for boiling shrimp and eating it plain or for a shrimp cocktail. Always increase the amount of celery, onion, etc., according to the amount of shrimp you want to boil. Also this is the same recipe for shrimp dip. Where you add mayonnaise and cream cheese and some more green onions.
