SCALLOPED SUMMER SQUASH 
2 eggs, well beaten
1 c. milk
1 c. cracker crumbs
2 c. sliced summer squash
4 tbsp. butter, melted or bacon fat
Salt and pepper
1/2 c. diced cooked bacon

Slice simmer squash into baking dish. Mix remaining ingredients thoroughly, reserving about 1/3 cup crumbs for top. Pour over squash and cover with reserved crumbs. Place in oven until crumbs are browned and mixture is firm. Bake at 325 to 350 degrees about 35 minutes.
