ROAST BEEF WITH PARMESAN CHEESE 
5 to 7 lbs. rolled rump roast, tied
1 1/2 tsp. garlic salt
1 tsp. salt
1/2 tsp. black pepper
1/3 c. grated Parmesan cheese

Preheat oven to 325 degrees. Have roast at room temperature. Mix garlic, salt, salt, and pepper and rub mixture onto all sides of meat. Roll roast in the Parmesan cheese; pat firmly, making a coating on meat. Put on trivit in a shallow pan. Allow 27 to 30 minutes per pound. Cook ahead; slice thin. Great hot or cold.
