KING RANCH CHICKEN 
1 pkg. tortillas
1 onion
1 bell pepper
1 clove garlic
1/3 can Rotel tomatoes with peppers
1 hen or fryer, boiled and boned
1/2 lb. Cheddar cheese, grated
1 tsp. chili powder
1 can cream of mushroom soup
1 can cream of chicken soup

(See directions for boiling below). Saute onion, pepper, and garlic. Layer in casserole dish the following: tortillas, dipped first in hot chicken broth; chicken; cheese, sauteed onion mixture; soup; repeat. Mash Rotel tomatoes and add with last layer of soup, then add a final layer of cheese. Bake at 350 degrees for 30 minutes, covered with foil.

Serves 8-10.

P.S. To Boil chicken: Cover chicken with boiling water. Add 1 stalk celery, 1 carrot cut in good sized strips, a little parsley, a little onion, salt and a little pepper. Bring to a boil, cover tightly and simmer very slowly until done.
