ARTICHOKE SAUCE 
1/2 c. olive oil
8 tbsp. butter
4 garlic cloves (chopped fine)
2 c. chicken broth or 4 bouillon cubes and 2 c. water
4 packets of "Cream of Chicken" (Cup of Soup)
1 c. Parmesan cheese
2 (15 oz.) jars artichokes packed in water (save water)
Lemon juice
Parsley, chopped, fresh

In a saucepan fry oil and garlic and then set aside to cool a little. Then add to the oil, the water from artichokes, chicken broth and butter, let come to a boil. Then add parsley and cream of chicken packets. Add artichokes to mixture. Keep mixing as sauce comes to a boil. Then add lemon juice to taste, depending on how tart you prefer. Just before serving, add Parmesan cheese. Serve over 1 pound of pasta. Serves 6. ENJOY! I prefer more garlic. Also, linguine or fettuccine are my preferred pastas.
