SPICE BLEND 
1 tbsp. finely grated orange peel or lemon peel
2 tbsp. ground cinnamon
1 tbsp. ground nutmeg
1 tbsp. ground cloves
1 tbsp. ground ginger

Spread lemon or orange peel on wax paper. Let stand uncovered 10 to 15 minutes. Mix peel with spices. Store in airtight container. Makes 1/3 cup. Add 2 or 3 teaspoons of mix to cake or quick batters. Mix with ice cream, yogurt or fruit.
