EASY LEMON JELLO CAKE 
1 pkg. lemon cake mix
1 c. cold water
1 (3 oz.) pkg. lemon Jello
3/4 c. salad oil
Rind of 1 grated lemon
3 eggs

You may substitute 3/4 cup oil and 4 eggs instead of the measurements above.

Mix at high speed for 4 minutes. Bake at 350 degrees in a 9 x 13 inch greased and floured pan for 35 minutes, or until tests done. Prick the top of the hot cake with lots of fork holes and pour one of the following toppings over:

TOPPING #1:
1/4 c. lemon juice
2 c. powdered sugar
Grated rind of 1 lemon

TOPPING #2:
1/4 c. butter
1 c. powdered sugar
6 tbsp. lemon juice

Heat until blended.
