MOM'S NEW ENGLAND CORN CHOWDER 
1/2 c. salt pork, diced
4 tbsp. onion, chopped
1/4 c. celery, chopped (optional)
3 to 4 med. size potatoes, peeled and diced
1/2 tsp. salt
1 3/4 c. water
2 tbsp. flour
2 c. warm milk
1/4 to 1/2 can evaporated milk
1 (20 oz.) can creamed corn
1 (20 oz.) can whole kernel corn
Chopped parsley (optional)

Saute the salt pork, then add to the pan and saute the onions and celery. Add the potatoes, salt and water and simmer until the potatoes are soft. Add the flour, milk and corn and heat together thoroughly.

Sprinkle with finely chopped parsley. Serves 6.

My mother made this from memory, for her family of nine children. I've since written it down and it is a big hit with our family.
