SQUASH - CHEESE CASSEROLE 
1 lb. summer squash
1 c. grated cheese
2 eggs, beaten
1 tsp. powdered sage
1 med. onion
1 tbsp. sugar
3 tbsp. butter, melted
Salt and pepper to taste

Cook squash in small amount of boiling water until tender, drain well. Mix ingredients except half cut cheese and paprika. Pour into buttered casserole pan. Place remaining cheese over top and sprinkle with paprika. Bake in 350 degree oven for 20 to 25 minutes or until it bubbles and cheese melts.
