SQUASH WITH CHEESE SAUCE
CASSEROLE
 
6 med. yellow squash (about 4 c. cooked)
1 tbsp. sugar
2 tbsp. butter
1 tsp. salt
2 tbsp. flour
1 c. milk
1/2 c. grated yellow cheese
1/2 c. bread crumbs
Dash paprika

Cut squash, cook in salted water until tender. Drain. Place in buttered baking dish. Sprinkle with sugar.

To make sauce, melt butter, add flour, salt and milk. Cook until it thickens, stirring constantly to keep from lumping. Add grated cheese; stir to melt. Pour sauce over squash; mix slightly. Top with bread crumbs, sprinkle with paprika. Bake at 350 degrees about 30 minutes.
