TINY ORANGE MUFFINS 
1 c. butter
1 c. sugar
2 eggs
1 tsp. baking soda
1 c. buttermilk
2 c. flour
Grated rind of 2 oranges
1/2 c. golden raisins
Juice of 2 oranges
1 c. brown sugar
3/4 to 1 c. chopped pecans

In large bowl, cream together butter and sugar, add eggs, beat until well mixed. Dissolve soda in buttermilk. Add buttermilk mixture alternately with the flour to egg mixture. Add orange rind and raisins. Spray miniature muffin tins with Pam and fill 3/4 full. Bake at 400 degrees for 15 minutes, remove from pans immediately and keep warm.

In small bowl mix orange juice and brown sugar. Pour a teaspoon of the mixture over each warm muffin. Makes 48 tiny muffins.
