CHICKEN CACCIATORE 
1 lb. boneless chicken strips
1/2 c. chopped onion
1/2 tsp. basil
1 garlic clove, minced
1/8 tsp. red pepper
2 tbsp. oil
1 c. green pepper strips
1 can (28 oz) tomatoes
1 can (8 oz) tomato sauce
1 tsp. salt
1/2 tsp. oregano
1 1/2 c. minute rice

Or use 1 jar (16 oz) spaghetti sauce and 1 1/4 c. water.

Brown chicken, onion and garlic in oil; add tomatoes, tomato sauce, seasonings and green pepper. Bring to a full boil. Stir in rice, cover, remove from heat. Let stand 5 minutes. Stir before serving.

Makes 4 servings.
