CHICKEN CACCIATORE WITH GREEN
BEANS
 
1 tbsp. oil
1/2 c. chopped onion
1/2 c. green bell pepper, chopped
1 clove garlic, minced
1 lb. boneless chicken, cut into 1" cubes
1 c. drained canned whole tomatoes
1 c. frozen cut green beans
1/2 tsp. oregano
1/4 tsp. salt

In hot oil, over medium heat, saute onion, pepper and garlic for 2 minutes. Add chicken to skillet and continue to saute until chicken is no longer pink. Stir in tomatoes, green beans and seasonings. Reduce heat and simmer, stirring occasionally for 10 minutes. Serve over hot spaghetti.
