HAWAIIAN DROP COOKIES 
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
2/3 c. shortening
1 1/2 c. sugar
1 egg
1/2 tsp. vanilla
1/2 tsp. almond
3/4 c. drained pineapple
1/2 c. shredded coconut

Mix by hand. Mix shortening, sugar, salt and egg. Beat well. Add flour, baking powder, flavorings, pineapple and coconut and mix until well blended.

Drop on ungreased cookie sheet by teaspoon, sprinkle with coconut if wanted. Bake 375 degrees until golden brown.
