LENTIL SOUP NAPOLI | |
1 (1 lb.) pkg. dried lentils 3 tsp. salt 1 lg. onion, chopped 2 lg. carrots, pared and sliced 1 tsp. oregano 1 (8 oz.) can of tomato sauce 10 c. water 1/2 lb. sweet Italian sausage (cut into 1 inch pieces) 2 c. chopped celery 1/2 tsp. pepper Wash lentils. Boil water and lentils 2 minutes, remove and let stand 1 hour. Bring to boil again, add salt and cook at simmer 1 hour. Brown sausage and add to soup. Brown onion in sausage drippings and add with rest of ingredients to soup. Cook 1/2 to 3/4 hour longer. |
