CALIFORNIA JAMBALAYA | |
1 cup chopped cooked turkey ham 2 cooked boneless skinless chicken breasts, cut into chunks 1 onion, coarsely chopped 1 bell pepper, coarsely chopped 2 cloves garlic, minced 2 cups rice (brown or white) 1 (28 oz.) can stewed tomatoes 1 tsp. each dried rosemary and thyme olive oil, for sautéing In large pot, heat olive oil. Add cooked ham and chicken and stir over medium heat until they start to brown. Stir in onion, bell pepper, garlic, rosemary and thyme, cooking about five minutes, until vegetables are tender. Add rice, stirring and cooking about five minutes more until rice begins to brown. Pour in the entire can of tomatoes and blend all ingredients well. Simmer, covered, for 35 minutes or until everything is well done and flavors have combined. Submitted by: TTH |
