CREOLE CORN MUFFINS 
2 eggs (well beaten)
1 1/2 c. milk
3/4 c. shortening, melted
2 tbsp. green pepper, chopped
2 tbsp. chopped onions
3/4 c. grated American cheese
2 1/2 c. flour
1 tsp. salt
2 tbsp. baking powder
4 tbsp. + 1 tsp. sugar
4 tbsp. + 1 tsp. cornmeal
1/4 tsp. red pepper
2 tbsp. chopped pimento

Mix eggs, milk, and shortening. Add green pepper, onions, pimento and cheese to flour, salt, baking powder, sugar and cornmeal. Add milk mixture, and stir only enough to mix. Bake at 400 degrees for 25 to 30 minutes.
