PERFECT PICKLED PEACHES 
1/2 c. cider vinegar
1/3 c. sugar
1/4 tsp. ground ginger
1- 3 in. stick of cinnamon
1/8 tsp. ground cloves
3 lg. firm, ripe peaches (peeled, seeded and quartered)

Combine vinegar, sugar, and spices in a heavy saucepan and bring to a boil. Reduce heat and simmer, uncovered for 5 minutes.

Add peaches and return to a boil. Reduce heat and simmer for 10 more minutes. Let stand 30 minutes. Serve peaches warm or chilled.

Serves 6.
