BLENDER PIE 
6 tbsp. butter
2 c. milk
1/2 c. sugar
1/2 c. all purpose flour
1/2 to 1 c. coconut (optional)
1 1/2 tsp. vanilla
4 eggs
Pinch of salt

Heat oven to 350 degrees. Melt butter in 9 or 10 inch pie plate; pour into blender. Add remaining ingredients to blender and blend 1 minute. Flour the greased pie plate. Pour ingredients into pie plate; bake about 40 minutes or until golden brown and knife inserted in enter comes out clean.

NOTE: A pie that makes it own crust and tastes like an old fashioned custard pie. A great spur-of-the-moment dessert; no mess. It comes out of the pan easily and is a great conversation piece, too!
