20 chicken taquitos
1 can enchilada sauce
1/2 cup sour cream
1 1/2 cups grated cheese
chopped onion or jalapenos (optional)

Mix Sauce and sour cream together. Spread a couple spoons full of sauce on bottom of (Pam sprayed) 9x13 casserole dish. Lay your Taquitos (enchilada style) in dish and pour rest of the sauce over Taquitos.

At this point add a few chopped onions or chopped jalapenos and Bake in 350°F oven for 25 minutes...take out and cover with 1 1/2 cups of grated cheddar (sharp is my favorite)...Put back in oven for another 5 minutes or until cheese is melted.

You will be amazed the way the taquitos puff up... Enjoy!!!
