REUBEN SAUSAGE CASSEROLE 
3 med. (2 c.) potatoes, cooked, pared, cooled
1 (16 oz.) can sauerkraut, drained
1 lb. Eckrich smoked sausage, thinly sliced
1/2 c. Thousand Island dressing
2 tbsp. parsley chopped
3/4 c. (3 oz.) shredded Swiss cheese

Combine all ingredients. Spoon into greased 9"x13" baking dish. Bake at 350 degrees for 25 to 30 minutes. Serves 5.
