PEANUT BRITTLE | |
2 c. sugar 1/2 c. water 1 c. white Karo syrup 1 tsp. vanilla 2 tsp. baking soda 1 tsp. butter 2 c. raw peanuts Combine sugar, water and syrup in pan; bring to soft ball stage on candy thermometer. Add raw nuts and cook to hard crackle stage. Remove from heat and add butter, soda and vanilla. Work fast, stir thoroughly. Pour onto 2 greased cookie sheets. Don't spread, just pour. If you spoon mixture the brittle will become so hard it will break your teeth. Another Note: If the weather is humid your brittle will become sticky. |
