MICROWAVE PEANUT BRITTLE 
1 c. granulated sugar
1/2 c. Karo syrup, light

I use a 2 quart glass microwave bowl/pitcher and a wooden spoon. Place in bowl and stir together. Cook 5 minutes at highest level; stir at halfway point of timing. Add to mixture:

1 c. nuts (salted or unsalted)

Cook 1 1/2 to 2 minutes at highest power. Add:

1 tsp. butter
1 tsp. vanilla

Cook 1 1/2 minutes at full power. Add and stir in:

1 tsp. baking soda

Immediately pour onto buttered tray. To thin out - pull apart with 2
forks after brittle is slightly set. Allow to cool completely and crack
into pieces.

I add the nuts at this point and make sure I cook the mixture for 6 1/2 to 7 minutes before adding the butter and vanilla and continuing with the recipe as directed.

Since microwave ovens vary in power, you may need to adjust your cooking time.
