SCALLOPED POTATOES 
6 med. potatoes, sliced
2 med. onions, sliced
1/4 tsp. pepper
1 tsp. salt
3 c. thin white sauce (see below)

Peel potatoes and onions and slice thin. Put 1/2 potatoes and 1/2 onions in greased casserole; cover with 1/2 sauce and seasonings. Add remaining potatoes and onions and top with remaining sauce. Cover and bake in moderately hot oven 350 degrees for 1 hour. Uncover to brown. May top with your favorite cheese.

WHITE SAUCE:

1 tbsp. butter
1 tbsp. flour
1 c. milk
1/4 tsp. salt

Melt butter; stir in flour until smooth. Add liquid gradually, stirring constantly. Cook over low heat for 5 minutes or until thick. Add salt and pepper. Cover tightly and place over hot water until ready to use.
