VELVET CUSTARD PIE 
1 unbaked 9" pie shell
2 1/2 c. milk
4 eggs
3/4 c. sugar
1 1/4 tsp. vanilla
1/4 tsp. salt
Grated nutmeg

Preheat oven to 350 degrees. Set out pie shell. In a saucepan, scald milk over high heat, set aside.

In a large mixer bowl, thoroughly beat the eggs, sugar, vanilla and salt together. Add 1 cup of the hot milk to the egg mixture, beating it in slowly. Add the rest of the milk and continue to beat slowly. Pour custard into the pie shell and sprinkle with the nutmeg.

Bake on the lowest shelf of the oven for 40 minutes or until it is a pale gold. Remove to rack and cool completely before cutting and serving.
