HONEY-LIME BROILED CHICKEN 
1 tsp. grated lime rind
Juice of 1 lime, 2-3 tbsp.
2 tbsp. honey
1/2 tsp. salt
1/4 tsp. ground hot red pepper
1 (3 lb.) chicken, quartered

Preheat oven to 450 degrees. Stir together lime rind and juice, honey, salt, and red pepper in small bowl until well mixed. Place chicken, skin side down, in shallow baking pan; brush with half the lime mixture.

Bake in preheated oven for 10 minutes. Turn chicken over, brush with remaining lime mixture. Bake 10 minutes longer. Turn chicken over, brush with pan juices.

Increase oven temperature to broil. Broil chicken 4-5 inches from heat for 8 minutes, basting once. Turn chicken skin side up; baste with pan juices. Broil 3 minutes more.
