HONEY LIME CHICKEN 
2 whole chicken breasts, split
Salt
2-3 cloves garlic, pressed
1/4 c. honey
2 tbsp. soy sauce
2-4 tbsp. fresh lime juice
1 (20 oz.) can pineapple slices
2 tsp. cornstarch
Grated peel from 2 lime

Drain pineapple, reserve 2 tablespoons juice. Rub chicken with garlic, sprinkle with salt. Broil or grill chicken until cooked through. Combine reserved pineapple juice, honey, lime juice, soy sauce and cornstarch in saucepan. Cook, stirring until thickened. Add pineapple to sauce. Cook until heated through. Spoon sauce and pineapple over chicken. Sprinkle with lime peel. Serves 4.

This was the BEST chicken ever! I grilled the chicken, giving it a smokey flavor and beautiful grill marks. The SAUCE was awesome. I used 4 tbsp of lime and all the other ingredients as listed. I used pineapple chunks instead of slices and it worked out great...a piece of pineapple and the chicken together is a real taste treat. Next time I make it, and I WILL make it again, I'm going to try 1/2 tsp of fresh grated ginger. You gotta try this recipe!

I love this recipe and will be making it again very soon. I grilled the chicken to give it that smokey flavor. I also added a little ginger to the sauce. This is a must try!
