TORTILLA LASAGNA | |
1 lb. ground beef 1 (17 oz.) can kernel corn, drained 1 c. salsa (mild or spicy, your choice) 1 (15 oz.) can tomato sauce 1 env. taco seasoning mix 1 (16 oz.) carton cottage cheese 2 eggs 1 tsp. Italian seasoning mix 10 corn tortillas 1 1/2 c. shredded mixed Jack cheese & cheddar Brown meat and drain off fat. Mix together meat, corn, salsa and the taco seasoning mix. Simmer on top of stove for 5 minutes. Line the bottom of greased 9"x13" pan with half the tortillas, overlap the edges. In a bowl combine the cottage cheese, the eggs and the Italian seasoning. Place half the meat on top of the tortillas and then spoon all the cheese mix over the meat. Repeat layer of tortillas and remaining meat. Top with the shredded cheese and bake at 375 degrees for 30 to 35 minutes or until bubbly. Let stand for 10 minutes before cutting. |
