SOUTHERN SKILLET CHICKEN CREOLE 
1/3 c. oil
1 frying chicken (2 1/2 - 3 lb.), cut up
1 lg. onion
1 lg. green pepper, chopped
1 c. sliced mushrooms
1 clove garlic, mashed
28 oz. can whole tomatoes, chopped
1 c. uncooked rice
1 c. water
2 tsp. Worcestershire sauce
1 tsp. salt
1/4 tsp. pepper

Melt shortening in large pan; brown chicken and remove. In shortening saute onion, pepper, mushroom and garlic. Stir in remaining ingredients, p ut chicken on top of mix, cover and simmer until chicken and rice are done and tender. Serves 4 to 6.
