TEXAS CAVIAR 
1/4 c. red wine vinegar
1 clove minced garlic
1/2 c. thinly sliced onion
1/2 tsp. salt
1/4 tsp. black pepper or you can use red pepper
1 c. vegetable oil
3 (16 oz.) cans blackeyed peas, drained

Measure vinegar into a 2 cup glass measure. Add garlic, onion, salt and pepper. Cover and microwave on high for 2 minutes. Measure oil into same cup and combine well. Pour over blackeyed peas, stir. Store in a glass jar in refrigerator 2 weeks for flavors to blend. Transfer to decorative jars if you want to give as gifts. Makes 1 quart.

Since microwave ovens vary in power, you may need to adjust your cooking time.
