CRUSTLESS COCONUT PIE 
4 well-beaten eggs
1/2 c. self-rising flour
1 3/4 c. sugar
2 c. milk
1 stick melted butter
1 tsp. vanilla
1 sm. can coconut (or 2 c. fresh coconut)

Mix ingredients well. Bake in a buttered 9x13x2 inch pan for 40 minutes in a preheated 325 degree oven. Serve hot or cold. Makes approximately 15 servings.
