PERFECT FRIED CHICKEN 
1/3 c. all-purpose flour
1 tsp. paprika
1 (2 1/2 - 3 lb.) chicken, ready to fry
1 tsp. salt
1 tsp. pepper
1 tbsp. Old Bay seasoning
Shortening for frying

Combine flour, paprika, salt, pepper and Old Bay seasoning in a plastic bag. Add 1 piece of chicken at a time and shake. Heat shortening (1/4 inch deep) until a drop of water sizzles.

Brown meaty pieces first, then add remaining pieces (don't crowd). Brown one side, then turn with tongs. Turn after 15-20 minutes. Cook until tender, about 30-40 minutes. Can add bread crumbs for crispier coating. Serves 4.
