CREAM OF MUSHROOM SOUP 
2 tsp. butter
1 c. fresh mushrooms, sliced
2 tbsp. onion, chopped
1/8 tsp. white pepper
2 c. chicken broth
1/2 c. light cream
1/4 tsp. salt
1/4 tsp. ground nutmeg

Cook mushrooms and onion in butter for 5 minutes. Blend in flour. Add broth. Cook and stir until slightly thickened. Cool slightly, add cream and seasonings. Heat through. Makes 4 to 6 servings.
