CREAM OF BROCCOLI SOUP 
1/4 c. butter
1 sm. onion, chopped
1 stalk celery, chopped
3 tbsp. flour
3 c. milk
1 tsp. salt
1/8 tsp. pepper
Cooked broccoli, 1/2 bunch cooked to personal consistency

In sauce pan, cook onion, celery in butter until tender. Stir in flour, add milk, heat mixture until if boils and thickens, stirring constantly. Season with salt and pepper to taste then adding cooked vegetable. May also be used with asparagus or cauliflower.
