VEGETABLE CASSEROLE 
2 (20 oz.) bags frozen vegetable mix (cauliflower, broccoli, carrots)
16 slices Velveeta cheese
1 tube Ritz crackers
1 stick butter

Cook vegetables and drain. Put in 9 x 11 inch dish and layer with cheese, crush the crackers and mix with the melted butter. Spread crackers on top of cheese and bake at 350 degrees for 30 minutes or until cheese is melted and the crackers are lightly brown.
