HEALTHY MUFFINS 
1 c. bran flakes
1 c. water
1/4 c. vegetable oil
1/4 c. brown sugar
1 c. instant nonfat dry milk
1 egg (can use egg substitute)
1 1/4 c. whole wheat flour
1 tbsp. baking powder (I use 3/4 tbsp. to cut sodium)

Combine bran, dry milk, water, egg and oil. Let stand 5 minutes. Combine flour, brown sugar, and baking powder, add to bran mixture; stir just to moisten.

Makes 12 muffins. Bake in 400 degree oven for 20 minutes.
