ESTHER'S HEALTHY MUFFINS 
Cut up 2 large or 3 small apples into small pieces. Sprinkle with cinnamon and set aside until all ingredients are mixed together.

Cream together in large bowl: 1 stick of no cholesterol butter, softened, or same amount of no cholesterol Crisco. 3/4 c. light brown sugar

When creamed together, add: 1/2 c. quick oats

Mix well.

Sift together and add: 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. each allspice and nutmeg 1/8 tsp. or less, ginger 1/2 to 1 c. milk (depends if you use butter or Crisco) 1 tsp. vanilla, if desired

Batter will be stiff as you add apples. Add raisins, if desired, to taste. Fill muffin pans or paper cups 3/4 full and bake at 350 degrees for 18-20 minutes. If you want to make chocolate muffins, add 4 tablespoons cocoa. Can also be baked as cake.
