GREEN RICE CASSEROLE WITH
BROCCOLI
 
1 onion, chopped
1/4 c. butter
2 c. cooked minute rice
1 can cream of mushroom soup, undiluted
1 sm. jar Cheez Whiz
1 (10 oz.) pkg. frozen, chopped broccoli

You may use 1/2 golden mushroom soup and 1/2 can cream of celery instead of mushroom soup.

Saute chopped onion in 1/4 cup butter. Cook minute rice according to directions on box. Cook frozen broccoli according to directions on package. Add all ingredients together and mix well.

Place in casserole dish and bake at 350 degrees for approximately 25 minutes, until bubbly. (I have used cooked regular rice and cooked and drained fresh broccoli.)

This recipe is great! Just the right mix of all the ingredients (not too soupy or too cheesy). Maybe even slighter better than my mom's recipe (which is saying a lot). Will definitely make again.

This is tasty and easy. I usually serve it as a side dish, but when I'm in a hurry I will cook this and add some chopped up cooked chicken for a one dish meal. I have never tried it with minute rice though. I always cooked regular rice, so I don't know if the type of rice makes a difference or not.

Add saluted celery with the onion, DON'T use minute rice, use ONLY cream of celery soup, add a qtr cup milk and a can of sliced water chestnuts. Cook the rice, salute celery/onion in butter, thaw and drain but do NOT cook broccoli, melt the chez whiz, mix half of chess with all other ingredients, pour into greased casserole dish, drizzle remaining chess whiz over the top. This is an holiday tradition in our family for more than 35 yrs, AND my most requested recipe. That and oyster stuffing!
