HEALTHY SPINACH QUICHE 
1 baked pie crust
1 tbsp. chopped onion
1 c. shredded cheese (Cheddar, Swiss, Parmesan...)
2 eggs, lightly beaten
1 c. plain yogurt
1 tbsp. flour
Salt
Pepper
1 c. cooked, chopped spinach

Preheat oven 450 degrees. Sprinkle onion and cheese over crust. Blend together everything else, adding spinach last. Pour over cheese and onions. Put in preheated 450 degree oven on lowest rack. After 15 minutes reduce heat to 350 degrees and bake 30 minutes longer. Remove from oven and let sit 5 minutes. Cut and serve.
