POTATO PANCAKES 
2 1/4 lb. raw potatoes
Salt
1 sm. onion
1-2 eggs
1 oz. plain flour or bread crumbs
About 4 oz. oil or lard

Peel, wash and grate the potatoes, then mix well with salt, the grated onion, the eggs and the flour or bread crumbs. Heat the fat, then put in the pancake mixture in spoonfuls and flatten them with a knife. Fry on both sides until brown and crisp. Serve with stewed fruit, French bean salad, or with cottage cheese. If the pancakes are preferred without flour, the grated potatoes should be well drained through a sieve before using.
