CAJUN GUMBO 
1 chicken, cut up, clean, salt and pepper
1 lb. smoked sausage, sliced thin
1/2 lb. hot sausage, sliced thin
3/4 lb. pork sausage, sliced thin
1/2 lb. ham, cut in small cubes
2 lb. shrimp (optional), peeled and cleaned
1 lb. imitation crab meat or 1 can crab meat

Seasonings (chop fine) : onion, green onion, bell pepper, celery, garlic and flour for gravy.

Lightly flour chicken, brown lightly on each side. Set aside.

Put pork sausage and hot sausage in large pot, saute until brown, take out of pot and put in bowl on the side. Brown smoke sausage, set aside.

Saute seasonings in same pot with small amount of drippings from sausages until soft, add water, put in (flour) chicken, sausages, ham and cook until chicken is tender. Add shrimp and crab meat and let cook about 20 more minutes.

Season to taste. I use small amount of cayenne pepper, salt, small amount of lemon juice, and 2 caps (1/2 teaspoon) liquid crab boil.
