LEMON COCONUT LOAF 
1 c. butter
2 c. sugar
3 tbsp. lemon juice
4 eggs
3 c. flour
2 tbsp. baking powder
3/4 tsp. salt
1/2 c. evaporated milk
1/2 c. whole sweet milk
Grated peel of 2 lemons
1/2 c. grated coconut

Preheat oven to 350 degrees. Grease and flour 2 loaf pans. Cream butter, sugar and lemon juice until light and fluffy. Add eggs, one at a time, beating after each addition. Sift flour, baking powder, and salt together. In small bowl mix the two milks together. Add flour and milk alternately in three additions. Do not overbeat; and fold in coconut and lemon peel. Bake an hour and 20 minutes. Remove from oven and with toothpick prick about 1/2 through the loaves and brush tops with a glaze of 1 cup of sugar and the juice of 1/2 lemon mixed together. Let cool in pans 20 minutes.
