LEMON LOAF (Nova Scotia) 
1/2 c. butter
1 c. granulated sugar
2 eggs
1 1/2 c. flour (sifted)
1 tsp. baking powder
1/4 tsp. salt
1/2 c. milk
Grated rind of 1 lemon or 1 tsp. lemon extract

Beat butter, sugar and eggs. Blend in dry ingredients alternately with milk. Bake in loaf pan, 350 degrees 1 hour.

Mix 1/4 cup sugar and 2 tablespoons lemon juice and spoon over top of loaf while still hot in pan. Cool 10 minutes and remove to wire rack and cool. Makes 1 loaf.
