BANANA-LEMON LOAF 
2 c. sifted flour
3 tsp. baking powder
1/2 tsp. salt
1/2 c. shortening
1 c. sugar
2 eggs
1 c. mashed bananas
2 tbsp. lemon juice
1 c. chopped walnuts
1 tsp. grated lemon rind

Sift together flour, baking powder and salt. Cream together shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas and lemon juice. Gradually add dry ingredients; mix just until moistened. Stir in walnuts and lemon rind. Turn batter into greased 9 x 5 x 3 inch loaf pan. Bake in moderate oven (350 degrees) for 50 minutes or until bread tests done. Cool for 10 minutes. Remove from pan. Cool. Makes 1 loaf.
